It is a crunchy and mildly spiced fried snack made from gram flour (besan) dough. unlike sev (which is crispy), gathiya has a softer, yet crunchy texture that melts in the mouth. Long or slightly irregular thick strips, often twisted or curled during frying. Mildly spiced with hints of asafoetida (hing), black pepper, and sometimes ajwain (carom seeds). golden yellow due to the use of turmeric.
